  • 1 cup panko breadcrumbs

  • 1 cup Italian breadcrumbs

  • 1 egg

  • 2 cups tomato sauce

  • 1 cup mozzarella cheese, shredded

  • Fresh basil leaves, for garnish

Directions

  • Season the chicken breasts with salt and pepper.
  • In a shallow dish, beat the egg. In a separate shallow dish, mix the panko and Italian breadcrumbs together.
  • Dip each chicken breast into the beaten egg, then into the breadcrumb mixture, making sure to coat well.
  • Place the chicken breasts in an air fryer and spray with olive oil. Set the temperature to 400°F and cook for 10-12 minutes, flipping halfway through.
  • Once the chicken is crispy and cooked through, remove from the air fryer and top each piece with tomato sauce and shredded mozzarella cheese.
  • Return the chicken to the air fryer and broil for 5 minutes, or until the cheese is melted and bubbly.
  • Serve hot, garnished with fresh basil leaves. Enjoy!
