4 chicken breasts, thinly sliced
1 cup panko breadcrumbs
1 cup Italian breadcrumbs
1 egg
2 cups tomato sauce
1 cup mozzarella cheese, shredded
Fresh basil leaves, for garnish
Salt and pepper, to taste
Directions
- Season the chicken breasts with salt and pepper.
- In a shallow dish, beat the egg. In a separate shallow dish, mix the panko and Italian breadcrumbs together.
- Dip each chicken breast into the beaten egg, then into the breadcrumb mixture, making sure to coat well.
- Place the chicken breasts in an air fryer and spray with olive oil. Set the temperature to 400°F and cook for 10-12 minutes, flipping halfway through.
- Once the chicken is crispy and cooked through, remove from the air fryer and top each piece with tomato sauce and shredded mozzarella cheese.
- Return the chicken to the air fryer and broil for 5 minutes, or until the cheese is melted and bubbly.
