Ingredients

  • 4 cups of arugula leaves

  • 1 lemon, juiced

  • 3 tablespoons of extra-virgin olive oil

  • Salt and black pepper to taste

  • 1/4 cup of grated parmesan cheese

  • 2 tbsp breadcrumbs (optional)

Directions

  • Rinse and dry the arugula leaves and place them in a large bowl.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the arugula and toss to coat.
  • Sprinkle the grated parmesan cheese  and breadcrumbs on top. 
  • Serve immediately and enjoy!
