Crunchy Kale Salad

Kale is a superfood that’s packed with nutrients, making it a great addition to any healthy diet. This kale salad recipe takes it to the next level with a simple yet delicious massage technique using olive oil, lemon, and salt. The result is a tender and flavorful kale base that’s complemented by the crunch of toasted pine nuts, the sharpness of grated Parmesan cheese, and the crunch of croutons. For an added protein boost, you can also include breaded air fryer chicken. This salad is easy to make, customizable, and perfect for a quick and healthy meal.

Ingredients:

  • 1 large bunch of kale, washed, dried, and chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1 piece breaded chicken, cut into bite size pieces (optional)

Instructions:

  1. Massage the kale: In a large bowl, add the chopped kale, olive oil, lemon juice, and salt. Use your hands to massage the kale until it is tender, about 2-3 minutes.
  2. Toast the pine nuts: Heat a dry pan over medium heat. Add the pine nuts and toast until they are golden brown, about 2-3 minutes. Set aside.
  3. Assemble the salad: Add the toasted pine nuts, grated Parmesan cheese, and croutons to the bowl with the massaged kale. Toss to combine. Optional: Add chicken to the salad. Serve immediately.
