Healthy Italian Meal-Prep

This week’s ‘healthy Italian’ meal-prep is so TASTY! Who doesn’t like Italian food!? Inspired by NCAA soccer champion @adamgoldfaden’s order at his favorite Italian restaurant! Full of protein and taste, this meal is perfect post workout or run

Since I always want to make my meal-preps fast and easy, I used the turkey bolognese sauce from Trader Joe’s. I substituted pasta with a bunch of vegetables for a low carb option! It tastes so good you don’t even miss the pasta!

Ingredients

  • 12 oz turkey bolognese sauce (Trader Joe’s- frozen)

  • 6 oz baby spinach 

  • 8 oz white mushrooms

  • 12 oz broccoli

  • 4 oz cauliflower

  • 4 oz carrots, chopped

  • 4 tbsp extra-virgin olive oil

  • 3 garlic cloves, minced

  • 2 tbsp parmesan cheese

  • 1 tsp red pepper flakes (optional)

Directions

  • Cook turkey bolognese sauce per package directions or homemade recipe (for Trader Joe’s frozen turkey bolognese sauce I just microwaved it for 2 min, stirred, then microwaved again 2-3 min).
  • Add broccoli and cauliflower to a large skillet over medium heat with olive oil. After 5-7 min, add in mushrooms and carrots. Cook for another 5-7 minutes until vegetables become tender.
  • Sauté spinach in a skillet over medium heat with olive oil and garlic (3-5 min).
  • Add turkey bolognese and spinach to the large skillet of veggies, mix together for 1-2 min; sprinkle with parmesan cheese.
