Veggie Skewers

It’s grilling season! One of my favs to grill: veggie skewers. So simple to make! I cut up a red onion, bell peppers, corn, mushrooms, zucchini, put on skewers, added olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, & grilled for 10-15 min, flipping occasionally. soo good!

Ingredients

  • 1 red onion

  • 2 bell peppers

  • 1 ear of corn

  • 8 white mushrooms

  • 1 zucchini

  • 2 tbsp extra-virgin olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1 tsp salt

  • 1/2 tsp pepper

Directions

  • Cut up vegetables into 1/2″ slices or chunks and add to skewers.
  • Brush vegetable skewers with olive oil, then sprinkle with garlic powder, onion powder, smoked paprika, salt & pepper.
  • Grill for 10-15 minutes, flipping occasionally.
