Healthy Chinese Chicken Salad

So good that I could eat this salad every. single. day !! My two fav ingredients (dressing and wontons) are from @gelsonsmarkets but you could find them at any grocery store (or make your own dressing if you have time). It’s perfect for big parties (made it for friends last night) or lunch (meal-prep) or even just dinner! Enjoy!

Ingredients

  • 1 head romaine lettuce

  • 1 chicken breast

  • 8 oz shredded carrots

  • 8 oz red cabbage

  • 1/4 cup peanuts (if allergic can sub sunflower seeds)

  • 4 tbsp honey mustard vinaigrette (I got Wolfgang Puck brand from @gelsonsmarkets)

  • 1/2 cup wontons (don’t skip these- they make the salad so tasty! 😋 also Wolfgang Puck from @gelsonsmarkets)

Directions

  • Cut chicken breast into 1 inch cubes. Add olive oil, minced garlic, & red pepper flakes. sauté in pan, flipping each slide, for 7-10 min
  • Add chicken to a bed of romaine, add cabbage, carrots, peanuts, wontons, and top with dressing!
