Chicken & Quinoa Salads

This week’s meal prep is rich in fiber & protein, which means you’ll be full and satisfied LONG after this nutrient packed meal! All of the ingredients can be found at Trader Joe’s also including my favorite ingredient, sweet potato ribbons!⠀⠀⠀

Ingredients

  • 1/2 c quinoa, dry

  • 2 chicken breasts

  • 10 oz broccoli

  • 8 oz sweet potato ribbons (Trader Joe’s)

  • 4 oz feta cheese (Fat Free from Trader Joe’s)

  • 6 oz baby spinach

  • 4 tbsp olive oil

  • 3 garlic cloves, minced

Directions

  • Add quinoa into a saucepan along with 1 cups of water. Bring the quinoa to a boil, then reduce heat to a low simmer. Cover the pot. Let the quinoa simmer for about 15 minutes till it becomes tender and all the liquid has been absorbed. 
  • Add chicken breasts to skillet over medium heat with olive oil, garlic, and seasoning of choice (I like Kick’N’Chickn from HomeGoods). Cook until 165 degrees (about 5 min per side). 
  • Bake sweet potato ribbons with olive oil and garlic for 20 min at 400 degrees F.
  • Bake broccoli on sheet pan with olive oil and garlic for 15 min at 400 degrees F.
  • Add everything together to a bed of spinach and top with feta cheese.
