Mediterranean Chicken

Such a healthy + simple weeknight dinner. Love making it in the cast iron or on the bbq! Enjoy with veggies, pita bread, and hummus.

Ingredients

  • 3 chicken breasts

  • 2 tbsp extra virgin olive oil

  • 2 garlic gloves, minced

  • Juice from 1 lemon

  • 2 tbsp fresh parsley, chopped

  • 1 tsp paprika

  • 1/2 tsp oregano, dried

  • 1/2 tsp salt

  • 1/2 tsp pepper

Directions

  • Mix together olive oil, garlic, lemon, parsley, paprika, oregano, salt & pepper. 
  • Add mixture to a large plastic food storage bag with the chicken breasts.
  • Marinate chicken for 20 min or up to 2 days in the fridge.
  • Cook chicken for 5-6 min per side, or until internal temp reaches 165 F.
