Salad meal preps are my favorite because they are so easy! The ingredients for my Mediterranean and Mexican salads are not only tasty, but healthy too. I meal prepped them at the same time and it was easy to put together! All you have to do is cook the chicken & steak (or buy it pre-made) because all the other other ingredients

Ingredients for MEDITERRANEAN salad
6 oz baby spinach
4 oz carrots, shredded
6 cherry tomatoes
1 can garbanzo beans
1 chicken breast
2 oz feta cheese
2 tbsp balsamic vinaigrette and/or hummus
1 tbsp olive oil
1 garlic clove
Seasoning for chicken
Ingredients for mexican salad
2 cups romaine lettuce
1/2 red bell pepper
1 ear of corn
1 can of black beans
6 oz steak
2 oz jack & cheddar cheese
2 tbsp ranch dressing and/or salsa
1 tbsp olive oil
Seasoning for steak
Directions
- Add chicken breasts to skillet over medium heat with olive oil, garlic, and seasoning of choice (I like Kick’N’Chickn from HomeGoods). Cook until 165 degrees F (about 5 min per side).
- Cook steak for 2-3 minutes each side for rare, 4 minutes each side for medium, and 5-6 minutes each side for well-done.
- Add all the Mediterranean salad ingredients together with chicken.
Add of the Mexican salad ingredients together with steak.
