Mediterranean & Mexican Salads

Salad meal preps are my favorite because they are so easy! The ingredients for my Mediterranean and Mexican salads are not only tasty, but healthy too. I meal prepped them at the same time and it was easy to put together! All you have to do is cook the chicken & steak (or buy it pre-made) because all the other other ingredients

Ingredients for MEDITERRANEAN salad

  • 6 oz baby spinach

  • 4 oz carrots, shredded

  • 6 cherry tomatoes

  • 1 can garbanzo beans

  • 1 chicken breast

  • 2 oz feta cheese

  • 2 tbsp balsamic vinaigrette and/or hummus

  • 1 tbsp olive oil

  • 1 garlic clove

  • Seasoning for chicken

Ingredients for mexican salad

  • 2 cups romaine lettuce

  • 1/2 red bell pepper

  • 1 ear of corn

  • 1 can of black beans

  • 6 oz steak

  • 2 oz jack & cheddar cheese

  • 2 tbsp ranch dressing and/or salsa

  • 1 tbsp olive oil

  • Seasoning for steak

Directions

  • Add chicken breasts to skillet over medium heat with olive oil, garlic, and seasoning of choice (I like Kick’N’Chickn from HomeGoods). Cook until 165 degrees F (about 5 min per side). 
  • Cook steak for 2-3 minutes each side for rare, 4 minutes each side for medium, and 5-6 minutes each side for well-done.
  • Add all the Mediterranean salad ingredients together with chicken.
    Add of the Mexican salad ingredients together with steak.
