Instant Pot Spaghetti Squash & Turkey Meatballs

Ingredients

  • 1 spaghetti squash

  • 1 jar oz 24 oz tomato sauce

  • Parmesan cheese, for garnish

  • Fresh basil, for garnish

  • MEATBALLS:
    – 16 oz ground turkey
    – 1/4 c Italian breadcrumbs
    – 1 large egg
    – 1 tsp dried basil
    – 1 tsp dried oregano
    – 1 tsp red pepper flakes

Directions

  • pierce the spaghetti squash with a fork and then microwave for 4 min to soften. then cut in half crosswise, scoop out the seeds
  • place 1 c of water & squash halves in instant pot. select “pressure cook” for 6 min
  • mix meatball ingredients & form into 12 small balls
  • when squash is done, take out of instant pot & pour out water. add 1/2 tomato sauce, then meatballs, then pour the rest of the sauce on the meatballs. select “pressure cook” for 7 min
  • while meatballs are cooking, use a fork to shred the squash into strands of spaghetti
  • take out meatballs & sauce, serve over spaghetti squash. add basil & Parmesan cheese
