Healthier Stir Fry

These stir fry bowls are filling because they are filled with fiber from the vegetables and brown rice. It’s recommended to have ~25 grams of fiber per day and these bowls will help you meet your needs! If you’re vegetarian you can swap out the ground turkey for a plant based protein, like chickpeas or beans.

Ingredients

  • 1 cup brown rice, dry

  • 12 oz ground turkey

  • 1 small stalk of celery

  • 10 oz broccoli

  • 8 oz mushrooms

  • 6 oz carrots

  • 4 tbsp balsamic vinegar

  • 3 tbsp olive oil

Directions

  • Cook brown rice per package directions.
  • Cook ground turkey on skillet over medium-high heat with olive oil for about 14-16 min or until 165 degrees F.
  • Add broccoli to a skillet over medium heat with olive oil. After 5-7 min, add in mushrooms and carrots. Cook for another 5-7 minutes until vegetables become tender. Mix everything together.
