Healthy Blueberry Donuts 

Donuts for breakfast? Yes, please! But what about the unhealthy ingredients that usually come with them? Fear not, because these healthy blueberry donuts are here to save the day! Packed with antioxidant-rich blueberries, these donuts are easy to make and sure to satisfy your sweet tooth without any of the guilt. They’re so easy to make, you’ll have a batch in no time!

Ingredients:

  • 1 1/2 cups frozen blueberries
  • 2 eggs, at room temperature
  • 1/2 cup plain Greek yogurt, at room temperature
  • 1 and 1/2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips 

Instructions:

  1. Preheat the oven to 350°F 
  2. Add the rolled oats to a medium-sized mixing bowl.
  3. Sift the all-purpose flour, baking powder, baking soda, and cinnamon into the mixing bowl with the rolled oats. Stir to combine.
  4. In a separate mixing bowl, whisk the eggs until light and fluffy. Whisk in the Greek yogurt and vanilla extract until well combined.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the blueberries and chocolate chips.
  7. Prepare a donut baking pan with nonstick spray. Fill each donut hole 3/4 of the way full with the batter.
  8. Bake for 20-22 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  9. Let the donuts cool for a few minutes in the tin, then transfer to a wire rack to cool completely. Enjoy!
