Ingredients:
- 1 1/2 cups frozen blueberries
- 2 eggs, at room temperature
- 1/2 cup plain Greek yogurt, at room temperature
- 1 and 1/2 cups rolled oats
- 1/2 cup all-purpose flour
- 1 and 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions:
- Preheat the oven to 350°F
- Add the rolled oats to a medium-sized mixing bowl.
- Sift the all-purpose flour, baking powder, baking soda, and cinnamon into the mixing bowl with the rolled oats. Stir to combine.
- In a separate mixing bowl, whisk the eggs until light and fluffy. Whisk in the Greek yogurt and vanilla extract until well combined.
- Add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the blueberries and chocolate chips.
- Prepare a donut baking pan with nonstick spray. Fill each donut hole 3/4 of the way full with the batter.
- Bake for 20-22 minutes, or until a toothpick inserted into the center of a donut comes out clean.
