Egg on Sweet Potato

Craving a savory breakfast? You have to try this egg & sweet potato recipe! Sweet potatoes are rich in an antioxidant called beta-carotene, which our bodies converts to vitamin A! You can switch up the vegetables or cheese on top as long as you have the egg and sweet potato!

Ingredients

  • 2 sweet potatoes

  • 4 eggs

  • 2 oz red bell pepper, chopped

  • 2 oz onion, chopped

  • 2 oz spinach, chopped

  • 3 oz mushrooms, chopped

  • 3 oz broccoli 

  • 4 oz mozzarella cheese

Directions

  • Puncture sweet potatoes with fork & microwave for 7 min.
  • Cut sweet potatoes in half and scoop out mashed part with spoon.
  • Add cut up vegetables to each sweet potato half.
  • Crack one egg on each sweet potato half.
  • Sprinkle mozzarella cheese on each sweet potato half.
  • Bake at 400 degrees for 20 min, or until egg white is cooked and not runny.
