Ingredients
2 sweet potatoes
4 eggs
2 oz red bell pepper, chopped
2 oz onion, chopped
2 oz spinach, chopped
3 oz mushrooms, chopped
3 oz broccoli
4 oz mozzarella cheese
Directions
- Puncture sweet potatoes with fork & microwave for 7 min.
- Cut sweet potatoes in half and scoop out mashed part with spoon.
- Add cut up vegetables to each sweet potato half.
- Crack one egg on each sweet potato half.
- Sprinkle mozzarella cheese on each sweet potato half.
- Bake at 400 degrees for 20 min, or until egg white is cooked and not runny.
