Creamy Cauliflower Rice

Current obsession: creamy cauliflower rice! since most stores have been out of white rice, I’ve been loving cauliflower rice. it’s even better mixed with spinach and sun-dried tomatoes and a side of chicken. perfect for a healthy dinner. Basic creamy cauliflower rice recipe below!

Ingredients

  • 16 oz riced cauliflower (about 1 head or 1 package from @traderjoes)

  • 2 tbsp extra virgin olive oil 

  • 2 garlic cloves, minced

  • 1/3 c heavy cream

  • 1/2 c grated Parmesan cheese

  • 1/2 tsp dried parsley

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp red pepper flakes

  • Optional: sun-dried tomatoes and spinach

Directions

  • Add olive oil to a pan over medium heat.
  • Add the garlic and stir for 30 seconds.
  • Add the riced cauliflower and cook for 8-10 min.
  • Add parmesan cheese, cream, parsley, salt, black pepper, red pepper flakes. Cook at medium heat for 5-7 min or until thick/creamy. (Optional: stir in spinach and sun-dried tomatoes)
