If you have a cold or want to prevent catching one… I would definitely recommend making this immune-boosting soup! I used a crock-pot but you could use an InstantPot to decrease the cook time.

Ingredients
2 c kale, chopped
5 carrots, chopped
5 celery stalks, chopped
1 onion, chopped
3 chicken breasts
1 c brown rice
9 c reduced sodium chicken broth
3 garlic cloves, minced
1 bay leaf
1 tsp rosemary
1 tsp parsley
1 tsp thyme
1/2 tsp sage
2 tsp salt
3 tsp pepper
Directions
- Add everything except brown rice to a crock pot. Cook on high for 6 hours
- Take out chicken, shred, and add back in for 10 more min.
- Cook brown rice separately and add in. Cook for 10 more min
