Instead of croutons, I like to air fry chickpeas, which are high in fiber! Also I like to snack on them as a crunchy snack instead of chips. A 1/2 cup of chickpeas is about ~17 grams of fiber! More than half your recommend 25-30 grams for the day! And I guarantee you can easily eat this amount if you try this recipe!

Ingredients
2 cans chickpeas
1/4 cup finely grated Parmesan cheese
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
1 tsp salt
1 tsp pepper
Directions
- rinse & pat dry chickpeas
- toss with 2 tbsp olive oil, 1 tsp dried oregano, 1 tsp garlic powder, 1 tsp salt, 1 tsp pepper, 1/4 cup finely grated Parmesan cheese
- air fry at 390 degrees F for 20 min, shaking every 5-7 min
