Ingredients
1/2 c quinoa, dry
2 chicken breasts
10 oz broccoli
8 oz sweet potato ribbons (Trader Joe’s)
4 oz feta cheese (Fat Free from Trader Joe’s)
6 oz baby spinach
4 tbsp olive oil
3 garlic cloves, minced
Directions
- Add quinoa into a saucepan along with 1 cups of water. Bring the quinoa to a boil, then reduce heat to a low simmer. Cover the pot. Let the quinoa simmer for about 15 minutes till it becomes tender and all the liquid has been absorbed.
- Add chicken breasts to skillet over medium heat with olive oil, garlic, and seasoning of choice (I like Kick’N’Chickn from HomeGoods). Cook until 165 degrees (about 5 min per side).
- Bake sweet potato ribbons with olive oil and garlic for 20 min at 400 degrees F.
- Bake broccoli on sheet pan with olive oil and garlic for 15 min at 400 degrees F.
- Add everything together to a bed of spinach and top with feta cheese.
