Chicken & Brown Rice Immune-Boosting Soup

If you have a cold or want to prevent catching one… I would definitely recommend making this immune-boosting soup! I used a crock-pot but you could use an InstantPot to decrease the cook time.

Ingredients

  • 2 c kale, chopped

  • 5 carrots, chopped

  • 5 celery stalks, chopped

  • 1 onion, chopped

  • 3 chicken breasts

  • 1 c brown rice

  • 9 c reduced sodium chicken broth

  • 3 garlic cloves, minced

  • 1 bay leaf

  • 1 tsp rosemary

  • 1 tsp parsley

  • 1 tsp thyme

  • 1/2 tsp sage

  • 2 tsp salt

  • 3 tsp pepper

Directions

  • Add everything except brown rice to a crock pot. Cook on high for 6 hours
  • Take out chicken, shred, and add back in for 10 more min.
  • Cook brown rice separately and add in. Cook for 10 more min
