Mediterranean Hummus Bowls

This recipe is inspired by the Mediterranean diet! The Mediterranean diet has been shown to help prevent heart disease, cognitive decline, depression, and cancer. I even included a homemade hummus recipe that only takes 5 minutes to make. Hope you enjoy!

Ingredients

  • 2 bell peppers (red & orange)

  • 1 medium bunch of broccoli

  • 8 baby carrots with stems

  • 1 cup brown rice (dry)

  • 2 chicken breasts (or ~12 oz chicken breast fillets)

  • For the hummus:
    -1 can drained & rinsed chickpeas
    -3 tbsp tahini
    -the juice of 1 lemon
    -2 cloves of garlic
    -1/4 c olive oil
    -1/2 tsp salt

Directions

  • Add chicken breast fillets to skillet over medium heat with olive oil, garlic, and paprika. Cook until 165 degrees F (about 5 min per side).
  • Cook brown rice per package directions.
  • Cut broccoli and bell peppers into small pieces. Add to sheet pan with carrots, olive oil, garlic, red pepper flakes. Roast at 400 degrees for 20 minutes.
  • Make hummus by blending together: 1 can drained & rinsed chickpeas, 3 tbsp tahini, the juice of 1 lemon, 2 cloves of garlic, 1/4 c olive oil, and 1/2 tsp salt.
  • Add chicken, rice, and veggies together and top with hummus!
