Makes 8 taquitos

Ingredients:

1 lb boneless skinless chicken breast, cooked and shredded

1/2 cup lite Mexican blend shredded cheese

2 tsp taco seasoning

1/4 cup fresh salsa

8 small corn tortillas

1 tbsp olive oil or avocado oil

For toppings: fresh salsa, guacamole, plain greek yogurt, or sour cream

Instructions:

  1. Preheat oven to 425°F.
  2. In a mixing bowl, combine the shredded chicken, cheese, salsa, and taco seasoning.
  3. Soften the tortillas by microwaving 2 at a time for 15-20 seconds between two damp paper towels.
  4. Spoon 2-3 tablespoons of the chicken mixture onto each tortilla, spreading it evenly and leaving a small border around the edges.
  5. Roll the tortilla tightly around the filling and place seam-side down on a parchment-lined baking sheet.
  6. Brush each taquito lightly with olive oil or avocado oil.
  7. Bake for 15-20 minutes or until golden brown and crispy.
