Balsamic Chicken Salads

Anyone else been craving something cold for lunch this summer?! In the winter I like eating warm meals for lunch but right now I’m on a salad kick! 🙃 This salad was so fast and easy to make (including the balsamic chicken)!

Ingredients

  • 2 chicken breasts

  • 1 can chickpeas

  • 2 heads romaine lettuce

  • 4 oz broccoli slaw

  • 4 oz shredded carrots

  • 8 oz fat free feta

  • tbsp fat free balsamic dressing

  • For chicken: olive oil, balsamic vinegar, minced garlic, & red pepper flakes

Directions

  • cut chicken breast into 1 inch cubes. add olive oil, balsamic vinegar, minced garlic, & red pepper flakes. sauté in pan, flipping each slide, for 7-10 min
  • drain and rinse chickpeas
  • add chicken & chickpeas to a bed of romaine lettuce. top with broccoli slaw, shredded carrots, feta, and balsamic dressing
