Ingredients
16 oz riced cauliflower (about 1 head or 1 package from @traderjoes)
2 tbsp extra virgin olive oil
2 garlic cloves, minced
1/3 c heavy cream
1/2 c grated Parmesan cheese
1/2 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
Optional: sun-dried tomatoes and spinach
Directions
- Add olive oil to a pan over medium heat.
- Add the garlic and stir for 30 seconds.
- Add the riced cauliflower and cook for 8-10 min.
- Add parmesan cheese, cream, parsley, salt, black pepper, red pepper flakes. Cook at medium heat for 5-7 min or until thick/creamy. (Optional: stir in spinach and sun-dried tomatoes)
