Cinnamon Granola


This homemade granola is healthier since it is made with extra-virgin olive oil and you can bake it or air fry it. Feel free to choose from pumpkin seeds or chopped nuts. You can also swap chocolate chips for dried cranberries. Added this tasty granola to a bowl of vanilla Greek yogurt & berries; such a healthy breakfast or snack. Enjoy!

Ingredients

  • 3 c old-fashioned rolled oats

  • 1 c pumpkin seeds (or chopped mixed nuts)

  • 1/2 c extra-virgin olive oil

  • 1/2 c maple syrup (I used sugar-free syrup sweetened with monk fruit @lakanto )

  • 1 tbsp ground cinnamon

  • 1/2 tsp salt

  • 1/4 c dark chocolate chips (or dried cranberries)

Directions

  • Mix all ingredients except for chocolate chips together in a bowl.
  • Pat down firmly on sheet pan. Bake in oven at 350 degrees F for 20-25 min, flipping the pan around halfway thru.
    OR
    Air fry at 350 degrees F for 15 minutes, stirring every 5 minutes until the granola is a golden brown.
  • Let cool completely, then mix in the chocolate chips.
  • Store in an airtight container for 3 weeks.
